Friday Friend – Lovely Laura’s Wild Rice Salad

I am so lucky to be surrounded by such beautiful friends who are generous and kind enough to share their recipes with me.

This delicious  rice salad is from my beautiful friend Laura.

It is perfect for this time of year when the days are hot and you just want something  nice and light. I could eat this salad all on it’s own, but I  usually serve it with some bbqd steak or a piece of grilled fish.

Wild Rice Salad

3 cups cooked wild rice

3 spring onions, thinly sliced

1/2 cup pine nuts or slivered almonds

1 cup of currants

2 red capsicums, diced

1-2 chillies, finely sliced

 

Dressing

2 tsps crushed ginger

3 tblsps soy sauce

2 cloves garlic, crushed

1/2 cup olive oil

Juice of 1 lemon

Mix all the salad ingredients together.

Combine dressing ingredients together, then add to salad and toss together.

This is a fabulous and very popular salad – and you can easily adapt it to suit…..

My Christmas  Day version    Wild Rice Salad  

3 cups cooked wild rice

3 spring onions, thinly sliced

1/2 cup pistachios

1 cup of dried cranberries

2 red capsicums, diced

1 chilli, finely sliced

1 pomegranate, seeds (If any one has an easy way to remove the seeds without creating a huge mess I would love to know!).

Handful of thai basil leaves and mint, torn

Mix all the salad ingredients together.

Dressing

2 tsps crushed ginger

3 tblsps soy sauce

2 cloves garlic, crushed

1/2 cup olive oil

Juice of 1 lime

Combine dressing ingredients together, then add to salad and mix well.
